Obesity epidemic in the US: Teaching kids about food

One third of Americans are overweight and nearly a third of people under 20 are obese. We asked our Zintro experts to discuss the current leading ideas, approaches, or policies that are being developed to address the obesity epidemic in the US.

Ann Baker, a holistic nutrition therapy coach, thinks that one solution is to teach kids in elementary school about whole food nutrition; where food comes from and is grown; and create school gardens and cooking classes. “Removing soda from schools is key, but so is re-vamping the school lunch program on a national level. Jamie Oliver has the right idea about the kinds of real food kids should eat,” she points out. “We need to incentivize schools to make meal program and educational changes to promote whole foods and healthy lifestyles. Schools that do this should get more federal dollars than those that don’t.

Baker has other ideas about how education around food choices and policies should go together:

  • Schools should bring back physical education as a mandatory class, every day in schools.
  • Don’t allow food stamps to be used for anything but fresh produce and fresh meats, and unprocessed cheeses.
  • From a health policy standpoint, allow insurance reimbursement for nutritional counseling for early prevention.
  • Follow a functional medicine and nutritional approach to health instead of the drug and surgery sick care model.

Dr. Mitchell Kershner, a holistic health educator, says that when a child is obese for a period of time the risk for serious chronic health issues increases accordingly. “Concerns in this area are going to present themselves with diseases such as diabetes, hypertension, increased risk for auto immune deficiencies, and certain cancers,” says Kershner. “One idea that only requires minimal application in the home starts with using smaller plates when serving meals. It has been shown that if a child sees a plate filled even though the plate is smaller, they tend to think they are getting more food. Another idea is to supply smaller portions. If seconds are desired, make the second portion considerably smaller with permission to get a third if necessary. Usually by that point the brain has received the message that the hunger signal has been satiated.”
Kershner says an additional idea that requires more discipline is to cut out soda, high sugar soft drink, and refined fruit juices. “The incline consumption of these types of beverages have substantially replaced other liquids, namely water, ice tea, and even natural juices. A bottle of soda water or seltzer and a jar of wholesome juice combined in an adequate ratio satisfies the same craving without all the added sugar or sugar replacement sweeteners,” he says.

Joanna C, a nutrition coach, says that the US government is still subsidizing food companies, wheat growers, and corn growers so fast food and processed foods end up being easier to purchase than real food and real produce. “This is where things need to change,” she says. “Parents and children need to eat real food, not packaged or processed foods. Parents need to learn how to cook and help children grow vegetables and teach them how to cook. We also need to build in exercise and sports into our every day scenarios.

One third of Americans are overweight and nearly a third of people under 20 are obese. We asked our Zintro experts to discuss the current leading ideas, approaches, or policies that are being developed to address the obesity epidemic in the US.

Omisslewis, an expert in exercise science and nutrition, says that there are a host of issues plaguing adults and children in relation to obsesity. “It comes down to the fact that there is too much food available to most people all the time. People eat for lots of reasons, but the one they should eat for is survival. Many foods that are legally marketed have little to no nutritional value. These foods are easy and cheap to produce and cheap to buy, are often addicting and purchased by low income families,” says Omisslewis. “Good foods like vegetables, fruits, and lean meats are expensive and not always available to families either due to cost or availability.”

Omisslewis points out that the public is overwhelmed by claims on foods, marketing tactics used to sell food (called structure and function claims), and general misinformation on food and fitness. “The FDA is trying to make it easier for the public to understand information about the food we need and the exercise we require, but it is just not enough. As for policy, there is a movement to have the FDA require compcanie to label food products with the standard food label and one that shows what was added to the product, for example, extra sugar,” she explains. “Farmers markets added to places that did not have access to fresh produce are increasing. And some cities, like Richmond, VA, have added bus routes to enable people in lower income areas to access stores where the fruit and vegetable choices are generous.”

Annette Maggi, a strategic nutrition marketing and communications consultant, says that the issue of weight is a complex one, and a multi-tiered approach is needed to manage it against obesity. “At the policy level, work is needed to ensure strong nutrition guidelines are in place for school lunch and that food regulations and policies are aligned with current science,” she says. “Fat taxes and junk food taxes have been bantered about but not instituted. New school lunch guidelines and calorie and nutrition labeling at restaurants are in process.”
Maggi points out that on the environmental level, cities can build bike paths and sideways; worksites can guide employees to restaurants with healthier menu items; and companies can offer vegetables, fruits, and lean proteins at reduced costs in employee cafeterias. “Consumers can change their environments by changing their driving patterns to avoid quick serve restaurants and convenience stores, using smaller plates and bowls at home, and purchasing fitness equipment. Many initiatives at the state level and through employer groups, retailers and insurers are moving in this direction,” she says. “At the individual level, consumers have purchase power, and can utilize the health and wellness offerings most grocery stores have to purchase more nutrient-dense food items. Getting healthier foods into the household can help build better habits. More than 6,000 grocery stores across the country offer programs to help shopper make more nutrition purchases.”

Kate Myerson, a registered dietitian and certified diabetes educator, says that obesity is a complicated disease because there are so many contributing factors. “All too often we hear single ideas called out as the cause of obesity, for example, fast food or sugar sweetened beverages. The truth is there is no one cause of obesity and there is not one singular change that will solve this problem,” she says. “There is consensus in the weight-loss research community that intensive behavioral intervention is, by far, the most effective nonsurgical treatment for obesity and overweight. What behavior modification addresses is not the what we are doing but the how we are doing it.”

Harvard University and the Massachusetts Institute of Technology (MIT) recently announced the formation of a $60 million joint venture called edX, which will offer free courses online. Many Ivy League and elite universities and colleges are moving in the same direction, such as Corsera (started by Stanford professors) and programs at Yale and Carnegie Mellon. We asked our Zintro experts what’s in it for these universities and where this trend is moving.

Keith Hampson, a digital higher education consultant, says that buried in the public responses to the news about Massive Open Online Courses (MOOC) and other initiatives from Harvard, MIT, Stanford, Penn, Princeton and others, is a deceptively important assumption.

“The assumption goes something like this: the open digital educational materials made available through these initiatives are of value because they are the product of these prestigious, highly selective institutions,” explains Hampson. “On the surface, this seems perfectly logical. It’s an interpretation of value based on the deeply engrained, long-used logic and criteria used to rank different institutions. According to this logic, the best institutions, like Harvard and Stanford, provide students (those with the money and grades) with access to the most respected academics, and in turn, to the latest and best thinking on academic subjects. The excitement about MOOCs from Princeton and others is that it gives the public access to materials that are otherwise available to a privileged few.”

However, in this case of edX, the traditional criteria for evaluating value in higher education may be misleading, says Hampson. He thinks that prestigious institutions may, in fact, be the least well prepared and least well-suited of all types of institutions to lead the MOOC expansion. The orientation, interests, and market focus of these institutions could limit their capacity to meet the needs that MOOCs typically seek to fulfill.

Hampson explains:

–          Harvard and others are producing digital education content, wrapped with some form of assessment. This work will flow out of the institution’s teaching capacity and operations.

–          These elite institutions earn their high ranking by placing their emphasis on research, not on teaching. This is true on an institutional as well as faculty level.

–          Faculty members hired by these institutions know that their labor market value is based primarily on their research productivity: the ability to garner research funds, conduct research, and publish.

–          The ability and motivation to produce high quality educational media, particularly the type that requires considerable independent learning, is not the same as deep subject matter expertise that comes from a research focus. Yet, it is the research productivity that is at the foundation of the excitement behind these initiatives.
“The majority of people that don’t have access to higher education and who would most benefit from MOOCs are generally not the same people for whom MIT-level material is appropriate,” says Hampson. “If a student is able learn MIT material via edX, then it is highly likely that he or she is more than capable of obtaining access to a college education. Moreover, to benefit from these initiatives, the learner must be relatively self-motivated and disciplined.”

If these initiatives, on the other hand, plan to pitch the material at a much lower academic level than what is taught at their institutions in order to serve the needs of students that are more likely to need access to free courseware, then these initiatives becomes of little significance, if not misleading, says Hampson.

“MIT, Harvard, and others are not launching these initiatives in order to grow their markets, expand revenue, or reduce costs. Rather, the motivation is primarily social and reputational. While the initiatives may generate some benefits for their own students (going digital has a tendency to impose more discipline on course design, for example), they are giving away their wares because they can afford to, and because philanthropic acts such as these support their brands,” says Hampson.

Krish Sailam, an expert on education lead generation, says that edX is not just about free courses, it is a whole new model of education that has several benefits. “It is low cost, it enables peer to peer learning, and the content is up to date. Colleges realize their cost structure is largely unsustainable as a key issue, but the underlying issue is that the everyone needs to learn not just the elite and rich,” he says.

Sailam says that edX takes advantage of new communication technologies, new interfaces, and the fact that the expert in the field might be the person sitting next to you, not the professor. “The concept of a degree is being undermined by new technologies that offer a la carte courses. Why are adult learners being forced to take on liberal arts courses when all they want is one specific course that is directly related to their job? Consider this the era of on-demand and bespoke education,” says Sailam.
“As other sites like Coursera, Udemy, Udacity, and KhanAcademy rise, the concept of micro-education will help bring online learning to the masses. MIT and Harvard want to be at the forefront of the learning revolution since they were considered kings of the traditional model. They need to stay relevant and at the head of the pack. edX is a great way to not only provide high-end knowledge, but also drive new research.”

Harvard University and the Massachusetts Institute of Technology (MIT) recently announced the formation of a $60 million joint venture called edX, which will offer free courses online. Many Ivy League and elite universities and colleges are moving in the same direction, such as Corsera (started by Stanford professors) and programs at Yale and Carnegie Mellon. We asked our Zintro experts what’s in it for these universities and where this trend is moving.

Glenn Everett, a higher education consultant, says that the motive behind edX is research. “The Harvard and MIT announcements emphasize the data that they will gather on how we learn, for application, online, and also in the classroom,” he says.  “They apparently intend to do some follow-up with the students, to learn not just how well they do on the exams, but how well they acquire and apply the learning months after the course has ended. And although they speak briefly of making the venture pay for itself through “modest fees” for certificates of course completion, Edx is apparently not driven by need for profit; they are not worried about “monetizing” the idea.”
Another, perhaps not-so-secondary motive, would seem to be establishing brand identity online for these residential schools, says Everett. “When asked what they have learned from other initiatives, Anant Agarwal, edX’s president, mentioned Khan Academy as ‘no. 1 out there’ in terms of innovation. One might surmise that Harvard and MIT hope for edX to have a Wikipedia-like impact in the area of free online courses,” he explains. “edX may have a significant impact in non-credit offerings, a staple of continuing education divisions at many colleges and universities. But Khan Academy was already showing where the future was heading. In the long term, the impact on student learning may be significant, but that depends entirely on quality of the research yet to be done—but at least it will be done.”

Lori Lyons, an ESL teacher in a developing country, says that Harvard and MIT’s joint edX venture is welcome news. “Why? It’s free. Talented, motivated educators in developing countries desperately need free access to top-quality courses. Current pricing structures make most online courses inaccessible to the vast majority of people,” Lyons says.

While one would love to think these courses will be offered altruistically for the improvement of world-wide educational standards, Lyons suspects that edX will also collect invaluable information on a global level regarding gaps in knowledge levels, language proficiency, cultural dispositions, and so on. “This data can be mined and re-purposed for for-profit ventures, in addition to leveraging it for customized corporate training,” she says. “It also might make these institutions more attractive for subsequent federal grants and the equivalent on an international level. Moreover, the project may be the world’s biggest beta test before launching new internet-based instructional technology.”

Gregnla, an expert in high tech sales for higher education who has been involved in marketing online education for years, says that from experience it’s very difficult for people to stay dedicated to online coursework, and this offering, as great as it is, will be no different. “That being said, it’s great to see some disruptive ideas flowing from such prestigious schools. With all the recent headlines about the now over $1 trillion in student debt, it’s probably a smart PR move for these institutions to offer free online education to the masses, especially considering how much Ivy League education costs,” says Gregnla.

Gregnla believes that offering these courses for free is a great, altruistic idea, but people won’t come away with an accredited degree. “It’s purely educational and thus won’t help people meet any job requirements. Only those who are truly interested and self-motivated in learning, for the joy of learning, will take advantage of these courses,” he says. “In my opinion, the people that this program could help the most (under-educated, low financial means) will probably not benefit from it.”

More on the Euro Crisis: Greece Teeters on the Edge

With Greece on the brink of new elections, and the possibility of Greece leaving the Euro inching forward, we asked our Zintro experts how a Greek exit from the euro currency would effect the economies of Europe and impact global markets.
Edward Marsh, an expert in international business development, says that it is almost immaterial if the actual Grexit occurs at this point. “Of course there will be some vexing and traumatic machinations which will be required to fulfill the transition, and reverberations will be broad, but, the important lessons are clear to those with the inclination and strategic perspective to acknowledge them,” he says. “Although borders, and certainly passports are relatively recent constructs, groups with common cultures are natural and longstanding. Partnerships based on trade and prosperity will complement cultural identities. Autonomous with a distinct identity and simultaneously an economically collaborative – that is the only sustainable model for economic integration. It’s the key to Germany’s success and the principle behind US Department of Commerce ‘Peace through Commerce’ initiative to animate American integration throughout ASEAN.”

Marsh points out that companies, just like countries, need to diversify interests among international markets with favorable demographic, commercial, and policy trajectories. ‘Strategically selecting optimal markets transcends chasing headlines and requires the application of rigorous research and comprehensive metrics addressing numerous diverse factors from demographics to political risk,” he says.
Bryan Allworthy, an investment analyst, thinks that a Greece exit from the euro will not be a Lehman Brothers moment for the euro zone. “The biggest impact on Greece leaving the euro will be felt in Greece. There is likely to be a lot of financial pain and behavior gain. The financial pain could well be shorter than the work out plan from Brussels. The behavior gain could be longer. A conceptual example might be found in the UK exit from the ERM: devaluation, reflation, competitive advantage,” he says.

As for the political situation in Greece, All worthy thinks that leaving the euro is best left to the Greek Central Bank. “Forget the politics until Greek politicians can claim credibility. If the Greek nation embraces the chance to benefit then transparency improves, FDI flows, and a new middle class prosperity emerges. It is not a trade but it could be an investment opportunity – not just portfolio investment but a real option for businesses too,” he says.

JP Morgan Chase losses mount

With the New York Times reporting that JP Morgan Chase’s losses may reach $9 billion, we asked out Zintro experts what issues may be behind this debacle.

Rex Danford, a consultant in strategic, capital, and marketing functions, says that this incident illustrates how investment and trading practices have grow increasingly complex without comparable growth in management tools and techniques. “Bank management requires more sophisticated and automated monitor and control systems to enforce investment policies and regulatory compliance, he says.

“Probable scenarios as to what caused the losses include inadequate responses to the warning signals due to management’s failure or inability to understand alternative outcomes and repercussions. Banking culture is predominantly one of assurance and risk understatement, which is not rational in the 21st century,” Danford says. “General lack of humility in the trading culture influences people to contain the bad news within their purview rather than seeking assistance from management superiors. JPMorgan-London is a case of humans not being prepared for the technology which makes as much sense as giving a child an Aston-Martn in lieu of a bicycle.”

Allan Foster, a consultant on hedge fund accounting, operations and compliance  believes that the rise from $2 billion to $9 billion was expected: “These were huge notional bets that cannot be easily closed out. The CDS instruments are what you could say very leveraged as you only have to put up a small percentage when positions are open and only the P/L is settled up when the contracts are closed,” he says.

Steven Zwillick, a consultant in banking operations and system management, says that Chase had $2 billion plus of assets (customer loans). “It took an equal amount of its operating capital and used it as a hedge against the loan risk. Chase lost this bet when it attempted to renegotiate the hedge deal,” he says.

Jim Higgins, an expert in the card and payment industries, thinks that Jamie Dimon’s recent debacle had nothing to do with Chase’s card programs. “Chase announced a new prepaid card program called Chase Liquid two days before the $2 billion trading loss on derivatives was revealed. In my opinion, commercial banks should not be allowed to trade any synthetic securities on their house account,” he says.
